Spooky Stuffed Peppers Ingredients:
- 4 large orange bell peppers
- 1 cup cooked quinoa or rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Olive oil for sautéing
Spooky Stuffed Peppers Instructions:
- Preheat the oven to 180°C (350°F). Cut the tops off the bell peppers and carve spooky faces into them like a jack-o’-lantern.
- Heat olive oil in a pan, sauté the onion and garlic until softened. Add black beans, corn, quinoa (or rice), cumin, paprika, salt, and pepper.
- Stuff the peppers with the filling and place them in a baking dish. Bake for 25-30 minutes, or until the peppers are tender. Garnish with cheese if desired.
