Spooky Stuffed Peppers Ingredients:

  • 4 large orange bell peppers
  • 1 cup cooked quinoa or rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Olive oil for sautéing

Spooky Stuffed Peppers Instructions:

  1. Preheat the oven to 180°C (350°F). Cut the tops off the bell peppers and carve spooky faces into them like a jack-o’-lantern.
  2. Heat olive oil in a pan, sauté the onion and garlic until softened. Add black beans, corn, quinoa (or rice), cumin, paprika, salt, and pepper.
  3. Stuff the peppers with the filling and place them in a baking dish. Bake for 25-30 minutes, or until the peppers are tender. Garnish with cheese if desired.
