Witch’s Brew Soup Ingredients:

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large zucchini, diced
  • 3 cups spinach
  • 4 cups vegetable broth
  • 1 cup cooked chickpeas
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Witch’s Brew Soup Instructions:

  1. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until soft.
  2. Add zucchini, smoked paprika, salt, and pepper. Sauté for 5 minutes.
  3. Add vegetable broth and bring to a simmer. Add chickpeas and spinach, cooking for another 10 minutes until the vegetables are tender.
