Baked Salmon with Carrots and Olives

Baked Salmon Ingredients (for 2 people):

  • 2 salmon fillets (about 200g each)
  • 2-3 medium carrots
  • 100g pitted black olives
  • 2 garlic cloves
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Fresh herbs (rosemary, thyme, parsley)
  • Salt and pepper to taste
  • 1 tablespoon capers (optional)

Baked Salmon Instructions:

  1. Prepare the vegetables:
    • Preheat the oven to 200°C (400°F).
    • Peel the carrots and cut them into thin sticks.
    • Peel the garlic cloves and lightly crush them.
  2. Prepare the baking tray:
    • Place the salmon fillets in a baking tray.
    • Add the carrots, black olives, and capers if desired.
    • Scatter the garlic cloves around the tray.
  3. Seasoning:
    • Drizzle everything with lemon juice and extra virgin olive oil.
